Hearts of Palm Ceviche

INGREDIENTS:

1 14-ounce can hearts of palm, diced
1 cup fresh tomato, diced
1/2 cup purple onion, diced
3/4 cup cilantro, finely chopped
1 serrano pepper, minced
2 tablespoons olive oil
1 avocado, thinly sliced
Juice of 1 large lime
Salt and pepper to taste
1 bag of tortilla chips or tostadas (your choice!)




PREPARATION:

Mix the hearts of palm, tomato, purple onion, cilantro and serrano pepper together.
Drizzle olive oil, sprinkle lime juice, and add salt/pepper into the mixture. Serve ceviche in a large bowl topped with avocado slices, and with a side of tortilla chips or tostadas.

Serves 4-6.

Growing up, whether my family and I were by the pool, or waiting for our food to come off the grill, my mother always served us hearts of palm ceviche.  While traditionally prepared with seafood, my mother’s version of ceviche is prepared with hearts of palm making it taste unlike one you've ever had. It's easy to make, healthy and delicious.
